Updates Node.js release metadata to point “latest” redirects at v26.1.0 instead of v26.0.0.

This adds v26.1.0/ to the cached release directory list, updates latestVersions.json (including node-latest.tar.gz) to v26.1.0, and repoints node-config-schema.json to the v26.1.0 docs path.
