Duplicate file created when using multiple annotations with the same name

Problem found in https://github.com/mapstruct/mapstruct/issues/2730.

We should ideally offer an option to provide a different suffix in the `@GemDefinition` that will make it possible to provide a different name for gems with clashing names.
