Increase memory for MicroVM in docker sandbox #6810

I tried mounting a large NodeJS project into a docker sandbox and kept getting OOMEs during npm install.
The maximum memory for sandboxes seems to be hardcoded to 4GB regardless of Docker Desktop settings, but it'd be great if I could increase that to 8GB somehow.
