Docker image: support for Apple arm64 architectures

Hi,

I'm glad to discover this project, and furthermore to see you published a docker image.
But it does not seem to be build for apple arm64 architectures ?

What about adding this target arch if possible ?

I can add that for sure. If you can’t wait there’s two things you can do:

1. Add the platform to the docker step of the GitHub workflow (darwin/arm64) and create a pull request
2. when pulling or deploying for now, explicitly state platform linux/amd64. You’ll get a small performance hit, but it’ll work.
